Ricotta Pancakes Recipe


Let’s face it – pancakes are the ultimate breakfast dish, but it gets kind of old
quickly. A great way to change it up is to add ricotta. The flavor of the ricotta
really adds another depth to your usual pancakes recipe. It also makes it a little
more sophisticated.
You can serve this with your favorite fresh fruit and with sweet cream on top.

30oz ricotta
1 large egg
1 tsp vanilla extract
½ cup granulated sugar
1 ½ cups all-purpose flour
2 Tbsp. Vegetable Oil (for frying)
1. In a large mixing bowl, combine the ricotta, vanilla, and egg until mixed
well. Add in the sugar and beat until well incorporated. Fold in the flour
and baking powder. In a separate bowl, pour in extra flour to dust the
dough with.
2. Use an ice cream scoop for the dough so you will have the same size for
every pancake. Scoop the dough and drop it in the flour mixture to coat.
Shape them into flat discs using your palm. Fry in the oil for about 3
minutes per side or browned.
3. Serve with jam.
